VEGGIE BEETROOT MASH

With Veggie Lovers Meatballs

INGREDIENTS:

  • 1 kilogram of floury potatoes, peeled and cut
  • 75 grams of thick crème fraîche
  • 25 grams of Horseradish paste
  • 500 grams of pre-cooked and grated Beetroot
  • salt and freshly ground pepper
  • 3 tablespoons of plant-based cooking oil
  • 2 trays of Veggie Lovers Meatballs
  • 60 grams of rocket

 

For the basil oil dressing:

  • 25 grams of Basil
  • 125 grams of extra virgin olive oil (good quality)
  • a pinch of salt and some freshly ground pepper

YOU’LL ALSO NEED:

  • A masher
  • A sieve
  • A blender or mortar
  • A non-stick frying pan

MADE WITH:

STEP 1

Peel and cut the potatoes. Grab a pan, add potatoes, water and a pinch of salt and boil for approx 15 – 20 minutes. Drain the potatoes and save some of the cooking liquid. Leave the potatoes out to dry steam.

STEP 2

Mash the potatoes, adding the crème fraîche and horseradish paste until you’ve created a cream-like consistency. If needed, add some of the cooking liquid.

STEP 3

Heat the beetroot (accordingly) and mix in with the mash. Season to taste with salt and pepper.

STEP 4

Parboil the basil for 10 seconds in a pan, rinse with cold water and drain in a sieve. Gently dab the basil dry with some kitchen towel. Using a mortar and pestle (or your food processor) muddle, and gently add the olive oil as you go. When done, season to taste.

STEP 5

Heat oil in your non-stick frying pan and prepare the Veggie Lovers Meatballs, as stated on the packaging.

STEP 6

Serve your Veggie Lovers Beetroot Mash with a handful of Rocket, our Veggie Lovers Meatballs and dress with the basil oil. And enjoy!
