VEGGIE CHICORY SALAD

With Veggie Lovers Mince Cordon Bleu

INGREDIENTS:

  • 4 pieces of chicory
  • 100 grams of pumpkin or carrot
  • 2 stalks of celery
  • 1 green apple
  • 4 tablespoons of plant-based cooking oil
  • 4 pieces of Veggie Lovers Mince Cordon Bleu
  • a bunch of blue grapes, halved
  • 4 twigs of flat parsley
  • 60 grams of pecan nuts

 

For the dressing:

  • 100 ml mayonaise
  • 30 grams of parmesan, finely ground
  • 1 clove of garlic, crushed
  • 40 ml of lemon juice (of 1 middle-sized lemon)
  • 2 teaspoons of dijon mustard
  • 1-2 teaspoons of honey
  • 40 ml sunflower oil
  • a pinch of salt and some freshly ground pepper

YOU’LL ALSO NEED:

  • A mandoline
  • A non-stick frying pan

MADE WITH:

STEP 1

Cut the chicory in half, remove the hard centre and cut into thin strips.

STEP 2

Peel the pumpkin/carrot and use a mandoline (or a vegetable peeler) to cut Julienne.

STEP 3

Wash the celery and apple (peel if necessary) and cut thinly. Mix with the pumpkin/carrot.

STEP 4

Heat oil in your non-stick frying pan and prepare Veggie Lovers Mince Cordon Bleu, as stated on the packaging.

STEP 5

Combine the ingredients to make the dressing. Mix well and dress the salad.

STEP 6

Add your Veggie Lovers Mince Cordon Bleu and garnish with the grapes, parsley and nuts. Enjoy!
