VEGGIE POKÉ BOWL
With Veggie Lovers Chicken Pieces

INGREDIENTS:
- 1 tray of Veggie Lovers Chicken Pieces
- 300 grams of mixed quinoa
- 100 grams of red cabbage
- 1 avocado, ready to eat
- 2 baby cucumbers
- 1 orange
- 80 grams of soybeans
- 80 grams of carrot (julienne)
- 2 teaspoons of sesame seeds
For the marinade:
- 3 tablespoons of sunflower oil
- 3 tablespoons of chilli sauce
- 1 tablespoon of ginger syrup
- 1 tablespoon of light soy sauce (low in salt)
For the dressing:
- 80 ml of orange juice
- 1 tablespoon of light soy sauce (low in salt)
- 1 tablespoon of sesame oil
- 1 tablespoon of rice vinegar
- 1 teaspoon of sambal
YOU’LL ALSO NEED:
- Mandoline
- A non-stick frying pan
MADE WITH:
STEP 1
Start by making the marinade: add all ingredients to a bowl and mix well. Then add the Veggie Lovers Chicken Pieces and let rest.
STEP 2
Prepare the quinoa as stated on the packaging and let cool down slightly.
STEP 3
Cut the red cabbage (using a mandoline or vegetable peeler) into wafer-thin strips. Then clean the avocado, and cut it into equal parts. Clean the baby cucumbers and cut them into tiny squares. Peel the orange and cut it into small particles.
STEP 4
Add the ingredients of the dressing altogether, and mix well. Add sambal to taste.
STEP 5
Heat oil in your non-stick frying pan and prepare Veggie Lovers Chicken Pieces, as stated on the packaging.
STEP 6
Build your bowl! First, add the quinoa and half of the dressing. Then add your veggies: the cabbage, avocado, cucumber, orange, soybeans, carrot and the Veggie Lovers Chicken Pieces on top of the quinoa. Finish your bowl by adding the rest of your dressing, and garnish with the sesame seeds. And.. enjoy!
